What Actually Happened
Continuing my series on eating well on a $40/week grocery budget...
I work a Monday - Friday schedule and prep both my dinners and lunches on Sunday. For dinners, I cook a full meal (and have posted the past few weeks of my meals on this subreddit). It would be a little much to cook full meals for lunch as well, so instead I cut a few corners here and there and make what I like to call "assemblage meals", which aren’t as transformational as cooking per se, but instead assemble individual ingred
